Recipe for the keto artichoke hearts:
canned artichoke hearts 1/2 bag of pork rinds seasons to taste - I used garlic powder, chili powder, salt, pepper Crunch up the pork rinds (I used a ziplock bag), add the spices and shake. Drain the artichoke hearts. Shake the hearts in the ziplock bag, coating well. Bake at 400 degrees for about 20 minutes (until brown and crunchy). Enjoy! Serve with keto ranch dressing! Yum!

Drink Recipe: Tangerine La Croix, vodka and fresh lime juice. Garnish with lime slice!
Egg recipe: remove the yolk from hard-boiled eggs & place in bowl. Mix with mayo & mustard, salt, pepper, cayenne pepper. Spoon back into egg whites. Top with bacon bits! Yum!

Keto Cocktail Sauce
sugar free ketchup + horseradish sauce – mix together with a drop of lemon juice! Enjoy!!
Keto White Sauce
sour cream, horseradish, lemon juice, garlic, salt, pepper – mix together – it’s delicious!!
Orange Brownies
Make brownie mix as usual, but substitute some of the oil for blood orange olive oil (we get ours from The Olive Tree in Helen, GA)! Fabulous!

Posting pictures of our last podcast food! And the recipe as promised!
The Taylor had homemade pizza on normal pizza crust – covered the crust with pizza sauce, then cheese, then the toppings she wanted! I had a cauliflower crust pizza with sausage, mushrooms and cooked onions!
Cauliflower Pizza Crust Recipe:
2 packages of frozen rice cauliflower
1 egg
Parmesan cheese
mozzarella cheese
garlic powder, spices as you want (like oregano or basil)
1. Cook rice in microwave (I got the steamer kind, so cooked in the bags)
2. Drain the rice and get out as much moisture as possible (I poured the rice into a bowl lined with paper towels and used additional paper towels to get as much wetness out as I could)
3. Mix in the egg and cheeses (I used shredded Parmesan as well as the powdered Parmesan)
4. Put parchment paper on a pizza pan and spread the rice mixture. Use a spoon or spatula to spread out the mixture into a circle – don’t make it too thick or it won’t crisp well (unless you want it less crispy).
5. Bake at 450 degrees for about 15-20 minutes, then flip it over and cook until browned.
Once it is out of the oven, add toppings and bake another 10-20 minutes until the top is as melted as you want!

We had some wonderful food at Le Meridien in Atlanta this weekend! We were there for the Writer’s Digest writing workshop (#ATLWW) and had a blast!!
